spring tasting menu

-grilled ramps and spring onions croustade.

- morels and almond tortellini with wild mushrooms broth, lemon verbena, walnut miso cream.

- green asparagus chawanmushi and crab.

  - grilled duck breast with elderflower honey, turnips and Snap peas.

-cherry granita with almond ice cream, grilled cherries and elderflower.

spring ingredients

spring is still going and with all the greens popping out, we have asparagus ( green, purple and  white), snap peas, sugar snap peas, spring onions, etc .

but its also the season for wild king salmon, sturgeon.

Morels and other wild mushrooms are also making their appearance

vegetarian menu

- beet cannelloni with strawberries kosho, goat cheese, licorice.

-carrots tart satin with elderflower and sea salt caramel.

-strawberry gazpacho

- fava beans, sugar snap peas, radishes aguachile.

- summer squash, dates and citrus paste in a brioche.

- strawberry and elderflower ice cream, grilled cherries, cucumber granita.
